Ingredients

Instructions

  1. 1

    1. Sear the chicken.

Heat a nonstick skillet over medium-high heat with a few drops of olive oil. Season the thighs with salt and pepper and sear 2–3 minutes per side, until lightly golden. Remove from heat and set aside.

  2. 2

    2. Make the spinach mixture.

In a bowl, mix the fresh spinach with the crumbled feta, garlic, fresh herbs, olive oil, salt, and pepper. Gently combine everything.

  3. 3

    3. Prep for the oven.

Preheat the oven to 200°C (400°F). Place the thighs in an oven-safe dish and spread the spinach and feta mixture evenly over each piece.

  4. 4

    4. Bake

Bake for 25–30 minutes, or until the chicken is fully cooked and the spinach is tender. For a more golden finish, broil for the last 2–3 minutes, watching closely so the cheese doesn't burn.

  5. 5

    5. Serve.

Let rest a couple of minutes before serving. A few drops of lemon juice on top add a nice fresh finish.
